If you love rice, but hate empty calories, substitute cauliflower rice! It’s surprisingly delicious and supplies your body with vitamins K and B, folate, antioxidants and fiber. By substituting cauliflower rice wherever you use white rice, you can cut the calories, reap the health benefits, and experience the same (dare I say BETTER) great taste. Zero butter. Zero oil. Don’t knock it til you try it!
Ingredients for Cauliflower Rice
1 head of cauliflower
1 tbs chicken bouillon flavoring (optional)
salt and pepper to taste
Recipe Instructions for Cauliflower Rice
Cut the florets of your pre-rinsed cauliflower away from the stem.
Heat a pot of water to boiling point.
Drop the cauliflower florets into the boiling water and cook until soft to the point they slice easily with a fork, about 15 minutes.
Add strained cauliflower to mixer (or bowl if you’re using a manual masher).
Add salt and pepper to taste.
Add chicken bouillon if you usually add butter to rice for flavor. I do this if I’m eating the rice plain as a side dish or adding the cauliflower rice to a recipe where the butter flavor would compliment it. If you’re going for a Mexican or Spanish rice type dish, leave the bouillon out most likely. I use this bouillon trick in my mashed potatoes as well and it does wonders! It totally replaces the butter flavor without all the calories. This one can lasts me months.
